Tasty Tuesday - Cherry Lemonade Cupcakes

Cherry Lemonade Cupcakes

I am a lover of lemon! For Easter I was in charge of dessert so I decided to make up some Lemon Velvet Cupcakes. (I used this recipe from Anne Strawberry.) They were so good! Moist, delicious and a HUGE hit! I knew I wanted to make them again and give them a little twist!

I went to the store looking for raspberry jello and saw this bright colored box on the shelf instead. I knew then, what I was going to make! You could probably use cherry, strawberry or raspberry and they would taste good too.

I have never made a "poke" cake before, but thought, why not give it a try and do it with cupcakes! I whipped up the Lemon Velvet Cupcakes (recipe via Anne Strawberry), you could mix up a regular lemon cake mix too, and let them cool. I then mixed up my jello, poked holes in my cupcakes using a fork and spooned the jello onto my cupcakes. (Use at least 3 spoonfuls per cupcake, maybe 4.)

The bad thing with mixing cupcakes and poke cake is that there is no pan to hold all the jello in. So make sure and add the jello while the cupcakes are on a tray that can catch any overflow. (I didn't end up using all the jello, so I made jigglers for the kids!)

After spooning the jello onto the cupcakes, wipe off the outside of the liners and let them chill in the fridge for 3-4 hours to set before frosting them. I made up a lemon cream cheese frosting for the top.

I put my frosting in a bag and piped it onto the cupcakes while they were in the pan. (I put them back in the pan before I chilled them in the fridge. Easier transport.) Adding cherries and some yellow pearls for decorations. I like the look of the stem on the cherry.

I just couldn't get over how gorgeous they looked. I actually used 2 types of cupcake liners. Regular paper liners and foil lined liners. I wasn't sure which one would work better. Both worked fine, I just thought being able to see the red in the cupcakes was a plus for the regular paper liners!
