Today I'm going to share with you my favorite summer salad!
I'm not sure if it really qualifies as a summer salad because it has cranberries and apples.
Aren't those fall fruit? :)
But this salad is fresh, sweet and delish!
If any of you have tried the Apple Pecan Chicken salad at Wendy's, this is how I make it at home.
I decided to try and remake this salad at home when I spotted this dressing at the store.
This salad dressing is the perfect finishing touch to this salad.
Here is what I do:
I cut up some crisp romaine lettuce
slice up about 1/2 a fuji apple
sprinkle on some blue cheese crumbles
add some craisins
and finish it with some sugared pecans
To make the sugared pecans I used the recipe found here at foodnetwork.com except I used pecans instead of walnuts. Note: Once sugared, I put all my nuts in a ziploc bag and store them in the freezer to keep them fresh.
Oh those sugared nuts are divine!!
The kids and I can eat them as a snack!
Just add some dressing and it is a delicious lunch!
Give it a try, you won't be disappointed.
